I think that this was probably the best brisket I have ever made. A year of practicing has really paid off. It was super tender and very tasty as confirmed by KnitTech and my teammate. However, I just don't know where I went wrong with the judges. I'm seriously thinking of contacting some of the "experts" on the circuit around here and seeing if they would be willing to give me a class on brisket..

When KnitTech came down (and I was mildly surprised she made it since it was HOT and she had to walk across the park and would be stuck with us for several hours) she brought the dreaded HavoK.. He seemed to enjoy himself. Now I'm one of those "people" that brings thier dog to a big public event. He was a great boy and really behaved himself. I'm really proud of him.
All the leftover brisket has been broken down and is packaged up for KnitTech's use in dinners and breakfasts. Tonight it'll be baked beans and brisket for dinner. This week some of KnitTech's awesome breakfast burritos.

Okay-- the brisket is making me hungry just looking at it! And HavoK IS a good dog. He was your brisket totem!
