Now its the beginning of a new year and time to start working it again. On the brewing front I bottled up our blackberry Lambic. It turned out pretty good, but doesn't have the strong blackberry flavor I was going for. I think next time we'll up the amount of blackberry that goes into it.
The brew club did our "Polar Bear" brew on new years. We have finally made our "All Idaho Brew". A brew made with all Idaho ingredients. Being the rebel that I am I'm fermenting my share with a Belgian Wit yeast and also some Brettanomyces. This will make more of a Lambic than an ale. Transferred it to a secondary this weekend and will be letting it keep fermenting for probably about another month..
Decided to do some more brewing this weekend. What does 36lbs of honey and 4 gallons of apple juice turn into?

How about 10 gallons of mead? The one on the left will end up being a plum mead. One of KnitTech's co-workers had a bunch of plums and we decided to give it a try. The one on the left was a request by Perky. I told her that I was going to make some Mead and if she wanted some she would need to pick up the honey (honey is expensive). She and KnitTech went off to the salon and made a side trip "The 200 dollar store" and came home with 18 more pounds of honey. I asked her what kind she wanted and after a quick conference with Kommandant it was decided that it would be apple. So the one on the right is the apple one.

Perky was supposed to bring over 4 gallons of apple juice on Sunday. Alas she wasn't able to. So KnitTech headed out and brought home 4 gallons (along with a few new plates). It's fermenting away and will be ready by Christmas time. Now to start building up a store of bottles..
