Christmas Grilling

Christmas dinner has been proclaimed a total success. Prime Rib turned out fantastic. Due to some “issues” on Christmas morning it ended up just being KnitTech, the cats and I for dinner. Don’t panic no big issues with Eldest Daughter and her husband, so don’t worry that there was a fight or anything. Just a very minor medical issue that delayed dinner.

The Prime Rib went onto the grill at about 3pm and it was finished at about 6:30pm. Internal temp was 127 degrees. Brought it in and let it rest for about 20 minutes. During the rest time I was out at the grill cooking Corn on the cob. Here is the Prime Rib after resting.

Off it went to the cutting board and out came the electric knife. One of my favorite kitchen toys, but stay tuned, there may be another favorite on the horizon. Tests will be made tomorrow.

Here is a picture KnitTech took of me doing the slicing. Note the intense concentration.

And here we have a plate of Christmas dinner. A new tradition at the KnitTech/GrillTech house. Grilled Prime Rib, Grilled corn on the cob, and roasted potatoes. The white sauce on the Prime Rib is Steven Raichlen’s “Volcanic Horse Radish Sauce”. Don’t panic at the name its not spice but very good. This goes very well with beef prepared in just about any form. The roasted potatoes is a KnitTech creation. It consists of potatoe chunks, jalepenos, green peppers, red peppers, onions, garlic, olive oil and assorted spices. All of this is roasted on a cookie sheet in the oven for about 30 minutes at 350 degrees. Very very tasty.

I even set up a plate for the kitties. Here you can see Peaches and Fran checking it out. Surprisingly there was no hissing or fighting while they were eating. These 2 cats can’t stand to be in the same room generally. Well at least they can’t stand being within 3 feet of each other, unless food is involved.
